These Prawn and Avocado Cocktails look perfect served in tall glasses but you can make smaller versions in any dishes of your choice.
Approx 15 minutes
Makes 2 giant or 4 standard starters
1 Romaine or Cos lettuce, washed and sliced
2 ripe avocados
2 limes, 1 squeezed, the other cut into wedges
Freshly ground black pepper
10cm piece cucumber, chopped
150g large cold water prawns
Few sprigs fresh coriander
1 tbs soured cream or crème fraiche
- Prepare the lettuce and divide between the glasses
- Peel and slice the avocados and squeeze over the juice from one of the limes, turning them to coat evenly to stop the avocado from going brown. Season with a little pepper
- Mix the cucumber with the prawns and coriander then add the avocado. Pile into the glasses and finish with a dollop of soured cream and a wedge of lime.
