Vegan Mince Pie Crackers Recipe:
You will need:
- Filo pastry (vegan)
- 1/4 cup of Coconut sugar, plus extra for dusting
- 1/2 cup of Raisins
- 1/2 cup of Cranberries
- 1 tsp Ground cinnamon
- 1 tsp Ground ginger
- ½ tsp Nutmeg
- 1 tsp Vanilla extract
- 1 Pinch of salt
- 2 Chopped oranges, zest and juice
- Melted coconut oil
Step-by-Step Below:
STEP 1: CUT THE FILO PASTRY INTO SQUARES
Cut the vegan filo pastry into square shapes and brush each of them with melted coconut oil, 2 at a time.
STEP 2: PLACE DIAGONALLY AND ADD FILLING TO ONE CORNER
Place a small spoonful of the homemade mince meat diagonally across one corner of the pastry.
STEP 3: NOW FOLD THE EDGES AND ROLL
Fold in the edges of the pastry and roll up.
STEP 4: PLACE THE ROLL ON ANOTHER DIAGONAL SQUARE
Place the filled roll diagonally onto the corner of another square and roll up.
STEP 5: PINCH THE ENDS TO MAKE A CRACKER SHAPE
Place the filled roll diagonally onto the corner of another square and roll up.
STEP 6: SPRINKLE WITH ICING SUGAR AND SERVE
Allow to cool slightly and then dust with coconut sugar and serve.
